How to make Barista
Barista!!
And no it is not the coffee chain!
Barista is
onion deep fried to a golden brown. These can be used in many dishes. They are
absolute must while making biryani. You can add them to korma dishes. It enhances
the flavour of mutton when you marinate them in barista. The uses are myriad!!
Making Barista takes time and patience. You can make them in
bulk and deep freeze them. Later use as and when required. I leant this trick a
while ago that adding some milk to the sliced onions make the Barista
crunchier. Do try it out!!
Ingredients
4 onions, sliced fine
2 cups oil
3 tbsp milk
I have mentioned 4 onions here. However it is totally up to
you how much Barista you want to make. Sprinkle the milk on the sliced onions
and keep aside for 20 minutes.
Heat the oil to smoking point. Add a bunch of sliced onions.
The onions will take about 15 minutes to turn golden brown. Let them fry on
high heat. Keep stirring from time to time.
Towards the end the onions will
turn from golden brown to burnt brown very quickly.
Keep stirring and scoop
them up as soon as you see them becoming golden in color.
