Chicken Noorani




Life is meant to be simple. It is we humans who complicate things. You know what the best time is? It is a Sunday spent lazing with your family. The tv should be off. The mobiles kept at a distance. No hanging around with your social media friends. It should be a “WE” day. And to compliment a WE day the food should also be simple, quick yet tasty.
The Chicken Noorani is a product of one such WE day. I meant to spend the least time in the kitchen. No three course meals. No prepping for hours. But then the problem of being a food blogger is that your family expects a masterpiece everytime. So the food had to be good.
Rice and chicken was planned. I put all the spices and condiments with the chicken and left it to marinate for 2-3 hours or just before lunch time. A quick saute and boil and the food was ready. Paired with hot steaming rice it was absolutely perfect.


Ingredients

1 kg chciken
Marinate the chicken in
2 onions, chopped fine
2 tomatoes, chopped fine
8 garlic pods chopped fine
1” ginger, julienned
2 bay leaves
2 dry red chillies3 black pepper pods
3 tbsp chopped green coriander
3 tbsp curd
3 tbsp chicken masala
1 tbsp Kashmiri chilli powder
Salt to taste

For the Barista
3 onions, sliced fine
1 tbsp milk

Marinate the chicken for about 2-3 hours.
Make the Barista. Mix the sliced onions and milk. Keep aside for 10 mins. Now heat a cup of oil to smoking point. Deep fry the onions in two batches. Make then crisp and brown. Take out a handful for garnishing.
Now in the same hot oil add the marinated chicken. Saute on high flame for about 10 minutes. Leave aside the handful of Barista for garnishing. Crush the rest of the Barista and add to the chicken. Add ½ cup of water, bring to boil and simmer till done. Garnish with the Barista.
