Cashew coated Grilled Chicken
6 large chicken pieces
First marinade
1 tbsp ginger garlic paste
1 tsp white pepper, coarsely
ground
½ tsp vinegar
Salt to taste
Second marinade
½ cup yogurt
2 tbsp cream
1 tbsp ginger garlic paste
1 tsp white pepper powder,
1 tsp garam masala powder
For final coating
2 eggs, whisked
10 cashews, ground to a paste
Mix the chicken and the first
marinade. Cover and keep for half an hour.
Prepare the second marinade and
marinate the chicken in it for further half an hour.
Preheat the oven to 200
degree Celsius. Bake the chicken for 15 minutes. To see whether it is cooked
through poke the chicken pieces with a knife. If the knife goes in smoothly it
means the chicken is cooked.
Now mix together the whisked
eggs and cashew paste.
Dip the chicken pieces in the batter and further grill
at 230 degrees for 5 minutes.
At this point the chicken is ready but there was
a lot of cashew batter left. Also when you dip the chicken in egg it forms a
thin coating.
So I decided to dip it again to make a thicker coat of egg and
cashew. I then further grilled it for another 5 minutes as egg takes very less
time to cook.
