Choco Cupcakes
Ingredients
1 cup flour
¼ cup cocoa powder
¼ tsp baking soda
¼ tsp baking powder
8 tbsp butter
¾ cup sugar
1 large egg
1 egg yolk
½ cup buttermilk
1 tsp vanilla essence
½ cup chocolate, melted and cooled
For the frosting
1 cup chocolate, chopped
1 tbsp castor sugar
2 tbsp butter, chopped
Preheat the oven to 180 degree Celsius.
Sift together flour, cocoa, baking powder and baking soda.
Beat the butter till smooth and creamy. Add the sugar and
blend till it is well mixed. Add the egg, beat well, then add the egg yolk and
beat again.
Add the vanilla essence. Add half the dry ingredients and
mix on slow speed. Then add the buttermilk and mix well. Add the rest of the
dry ingredients.
Once the mix is even you can add the melted chocolate.
Now divide the batter into muffin moulds. Bake for 20-25
minutes.
After 20 minutes you can test the cupcakes with a toothpick.
If you feel that they require some more baking then you can do so for 5 more
minutes.
Once done take the cupcakes out of the oven and let them
cool.
For the frosting
Melt the chocolate on a double boiler. Take it off the heat.
Add the sugar and butter and whisk well.
Now take the cupcakes and dip them in
the frosting. You can decorate them with sprinkles.
