Coconut cake

Coconut cake



This is a very simple, Plain Jane cake in the sense that it really does not require any frosting or icing. The flavour of coconut milk and dessicated coconut does all the talking. there is a freshness in the vanilla-coconut texture that, I feel, should be unmarred by anything else. A perfect tea time cake. 

Ingredients

2 cups flour
1 tsp baking powder
1 cup coconut milk
4 tbsp butter
4 large eggs
2 cups sugar
1 tsp vanilla essence
¾ cup shredded coconut


Preheat oven to 180 degree Celsius.
Sift together flour and baking powder.
Pour the coconut milk into a pan, add the butter and gently heat until the butter has melted. Remove from heat.
Beat together eggs and sugar till pale and frothy. Add the vanilla essence.
Add the flour and beat well. Now blend in the desiccated coconut. Slowly add the milk and butter mix. Bake for about 45-50 minutes. You can check if the cake is done with the help of a tooth pick.
