Kombdiche Sukhe/Dry chicken

Kombdiche means chicken and
sukhe menas dry. So the name literally means a dry chicken recipe. It is part
of the Konkani cuisine and is hot and spicy. I have toned down the spice factor
in this dish and also I have cooked in mustard oil and not coconut oil.
Ingredients
1 whole chicken, cut into
pieces
10 black peppercorns
2 tbsp coriander seeds
1 tbsp cumin seeds
4 onions, sliced
5 red chillies
10 garlic cloves
2 tbsp ginger, chopped
Juice of 1 lime
Salt to taste
Grind together coriander
seeds, cumin seeds, peppercorns, red chillies, ginger, garlic and salt.
Add the
lime juice. Marinate the chicken in the spice mix for two hours.
Heat some mustard oil. Add
the sliced onions and sauté. Once the onions turn translucent add the chicken
pieces and fry on high flame for about 10 minutes.
The chicken will be nicely
browned. Add a little water, cover and cook till done.
