Ghosht Lahori

Ghosht Lahori



I have tried out many mutton dishes but by far this is my favorite. The combination of curd and tomato gives this dish a tangy taste that I simply relished. Best eaten with hot steaming rice.

Ingredients

500 gm mutton
1 cup curd
5 tomatoes, blanched, skinned
1 tbsp ginger paste
1 tbsp garlic paste
2 green cardamoms
3 black cardamoms
2 bay leaf
Few black peppercorns
3-4 cloves
Small piece of cinnamon
1 tbsp Kashmiri Red Chilli powder
1 tbsp garam masala
Salt to taste


Purée the tomatoes and curd. 


Heat some oil in a pressure cooker. Add the khada masala i.e. cinnamon, cardamoms, cloves, bay leaf, and peppercorns. 


Add the ginger and garlic pastes. Sauté for a few seconds.

Add the red chilli powder,salt and garam masala. Fry till the masalas are well incorporated.

Add the tomato and curd mixture and bring to a boil. Boil for about 5 minutes on medium heat. Add the mutton pieces, stir and close the lid. After the first whistle lower the heat and keep for about 5-8 minutes.

 Once the pressure drops open the cooker and simmer for a few more minutes till the gravy starts to thicken.
