Pinwheel Pizza

Pinwheel Pizza

I am sure nobody will ever get tired of Pizza but just in case you are bored of the same old shape here is something else you can try out. These pinwheel Pizzas can also be served as finger food in parties. It is dainty, easier to hold and tastes as good as a pizza. As for the filling let your imagination lead you. I have used a simple chicken filling.

For the dough
2 cups atta or flour ( here I have used flour but you can substitute with atta)
1 cup less 2 tbsp warm water (the water should be lukewarm)
 2tbsp warm milk
1 tbsp dry yeast
½ tsp sugar
1 tsp salt
2 tbsp olive oil
1 tsp dried sage
1 tsp dried rosemary
I tsp dried parsley
1 tsp red chilli flakes

Mix warm water, warm milk and sugar. Sprinkle the yeast and cover it for 5 -10 minutes. The yeast should foam and rise. If it doesn’t then try another batch. If the yeast does not foam it means your dough will not rise.

Mix together flour, salt, sage, rosemary, parsley, red chilli flakes and fried garlic. Add the yeast mixture and oil. Knead well to make soft and smooth dough. If the dough seems sticky add some more flour. Cover with a clingfilm and keep aside.

For the filling
½ cup chicken, boiled and shredded
1 onion, chopped
1 capsicum, chopped
1 tsp oregano
1 tsp red chilli flakes
Salt to taste
Mix all the above and season with salt.

Once the dough has doubled in size punch it down and keep covered for another 10 minutes. Roll out on a floured surface. Spread the filling and roll it up tightly.

Cut into roundels. Place the roundels on a greased baking dish. Cover with a damp cloth and keep aside for 20 minutes.
Preheat the oven at 220 degrees Celsius. Bake for about 20 minutes.
