Brookies fever is on and it has caught up with me. Every foodie fb and watsapp group is full of brookies pics. And they looked delicious. So I searched online and found that there are many kinds of Brookies.
Basically it is a mixing of the Brownies and Cookies. Some are dark luscious chocolaty cookies, some are brownie centric with cookie dough added to the batter.
The ones I tried out have two separate and distinct elements..the dark and the light. The Dark is brownie dough, fudgy and chewy. The Light is the cookie dough, crunchier. And when the two get together..uffff!!!
That is all I am going to comment!! Ufffffffffffff...!!!!

Ingredients
You have to make two kinds of dough, the choco chip cookie dough and the brownie dough as it needs to chill more.
For the Choco Chip cookie dough
1 ¼ cups all purpose flour
½ tsp baking soda
7 tbsp butter, at room temperature
½ cup brown sugar
¼ cup granulated sugar
1 tsp vanilla essence
1 large egg
¾ cups choco chips
Sift the flour and baking soda. Beat the butter. Add both the sugars and the essence and beat till pale and fluffy. Add the egg and beat again to mix well. Fold in the flour. Fold in the choco chips. The dough will be thick and sticky. Cover with a cling film and put in the fridge.
For the Brookie dough
6 tbsp butter, melted
½ cup choco chips, melted
1 cup flour
2 tbsp cocoa powder
½ tsp baking soda
½ cup brown sugar
¼ cup granulated sugar
1 tsp vanilla essence
1 large egg+1 egg yolk
Melt butter and chocolate. Sift flour, cocoa powder and baking soda. Add the sugars and essence to the chocolate mixture. Fold in the flour. The batter will be thinner than the cookie dough but putting it in the fridge will harden the butter.
Leave both batters in the fridge for ½ hour.
Preheat the oven to 180 degrees Celsius. Take one spoonful of each dough and smush them together.
Do not mix the two too much. You want the distinct light and dark portions. Bake for 12-15 minutes.
The brookie will start browning around the edges but the centre will be soft. Let it cool down. Brookies are unlike cookies and will be soft and chewy.
