I
had soaked my dry fruits in cherry brandy about 2 1/2 months ago for my
Christmas Cake. Now that cake has about 1 kg of dry fruits, 200 gms of flour
and homemade treacle. It is slow baked for more than an hour. A cumbersome
process and something I am willing to do only on Christmas Eve.
However sonny boy has been eyeing the soaked dry fruits for past few days and is demanding a Christmas Cake right now. So to appease him I baked this Jhatpat one. Jhatpat because I soaked the dry fruits only overnight. And it is eggless. So here is a pre Christmas Cake

1 ½ cups assorted dry fruits, chopped ( I used candied cherries, dates, raisins,
tutti frutti and candied orange peels)
1 cup orange juice to soak the dry fruits
2 cups flour
1 cup warm water
1 cup brown sugar
2/3 cup oil
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon powder
½ tsp cardamom powder
¼ tsp nutmeg powder
2 tbsp chopped walnuts and almonds
Soak the dry fruits in orange juice overnight.
Preheat the oven to 180 degrees Celsius. Grease and line
a loaf tin.
Mix the warm water and brown sugar till the sugar melts.
Add the oil and mix again.
Sift together flour, baking powder, baking soda, cinnamon
powder, cardamom powder and nutmeg powder. Add to the oil water mix. Gently
keep stirring till there are no lumps. Add the dry fruits along with the orange
juice. Add the chopped walnuts and almonds. Pour into the baking tin and bake
for 50 minutes. Check with a toothpick to see if it is done.
