Palak Posto Chicken




Palak posto chicken..sounds unusual? Well it tastes great. Anyone following my blog regularly will know that my son is a die hard non vegetarian. He needs to have chicken regularly. And then it has to be a different preparation every time. So mommy dearest has the task of thinking up new recipes everytime. Also she has to keep in mind that the food better be healthy. My little Popeye the sailor man is fond of spinach thanks to his earlier obsession with the namesake cartoon character. So I came up with this chicken+spinach combo. Added some posto just for the heck of it. And voila!!! It tasted so good that I made it continuously for a whole week. Yayy !! happy with successful experiments.


Ingredients

1 chicken, cut into pieces
2 bunches spinach, blanched
5 tbsp posto/khus khus, soaked
2 onions, pureed
2 tomatoes, pureed
1 tbsp ginger garlic paste
2 tbsp chicken masala
1 bay leaf
2 dry red chillies
1 tsp turmeric powder
1 tsp Kashmiri red chilli powder
Salt to taste
¼ cup mustard oil


Puree the blanched spinach. Grind the posto to a fine paste. Heat the mustard oil. Add the bay leaf and dry red chillies. Add the onion puree and ginger garlic paste. Saute till the onions turn translucent. Add the tomato puree, chicken masala, turmeric powder, Kashmiri red chilli powder and salt. Cook till oil starts leaving the sides. Add the posto paste and cook. One the mixture starts getting dry add the chicken pieces. Fry on high flame till the chicken is well coated with the masala. Add ½ cup of water and bring to a boil. Cover and simmer till done.
